Slow Cooker Salisbury Steak Meatballs

Ingredients
  

  • 1 lb ground beef lean
  • 1 egg beaten
  • 1/4 cup breadcrumbs plain or seasoned
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil for browning meatballs
  • 1 onion sliced
  • 8 oz mushrooms sliced
  • 2 cups beef broth low sodium preferred
  • 1 tbsp Worcestershire sauce
  • 2 tbsp cornstarch mixed with 2 tbsp cold water to form a slurry

Instructions
 

  • In a bowl, combine ground beef, egg, breadcrumbs, onion powder, garlic powder, salt, and pepper. Mix until just combined.
  • Form mixture into 1 to 1.5 inch meatballs.
  • Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, working in batches if needed. Do not cook through.
  • Place sliced onions and mushrooms at the bottom of the slow cooker. Arrange browned meatballs on top.
  • In a small bowl, whisk together beef broth and Worcestershire sauce. Pour over meatballs.
  • Cover and cook on low for 4 to 5 hours.
  • About 20 minutes before serving, stir in cornstarch slurry. Cover and continue cooking until the gravy thickens.

Notes

For added flavor, try adding a dash of Dijon mustard or a splash of red wine to the gravy.
