Ingredients
  

  • 2 lbs beef sirloin cut into thin strips
  • 1/4 cup cornstarch for coating
  • 2 tbsp vegetable oil for browning
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tsp ground ginger
  • 2 cloves garlic minced
  • 1 tsp black pepper
  • 2 large bell peppers sliced (any color)
  • 8 oz mushrooms sliced
  • 1 medium onion sliced

Instructions
 

  • Toss beef strips with cornstarch until evenly coated.
  • In a large skillet over medium-high heat, heat vegetable oil and brown the beef in batches (do not cook through).
  • Transfer browned beef to the slow cooker.
  • In a bowl, whisk together beef broth, soy sauce, brown sugar, ground ginger, garlic, and black pepper. Pour over beef.
  • Add sliced bell peppers, mushrooms, and onion to the slow cooker. Stir gently.
  • Cover and cook on low for 6 hours or until beef is tender and vegetables are cooked through.
  • Serve hot over rice or noodles.

Notes

For added heat, stir in a pinch of red pepper flakes before cooking.
