Instructions
Toss beef strips with cornstarch until evenly coated.
In a large skillet over medium-high heat, heat vegetable oil and brown the beef in batches (do not cook through).
Transfer browned beef to the slow cooker.
In a bowl, whisk together beef broth, soy sauce, brown sugar, ground ginger, garlic, and black pepper. Pour over beef.
Add sliced bell peppers, mushrooms, and onion to the slow cooker. Stir gently.
Cover and cook on low for 6 hours or until beef is tender and vegetables are cooked through.
Serve hot over rice or noodles.
Notes
For added heat, stir in a pinch of red pepper flakes before cooking.
