Ingredients
2poundsbeef sirloincut into strips or chunks
1oniondiced or sliced
3bell pepperssliced, any color combination
3clovesgarlicminced
3/4cupbeef broth
3beef bouillon cubescrumbled
1/4cupsoy sauce
2tbsphoneyor brown sugar
1tspWorcestershire sauce
1tspground gingeror fresh grated ginger
salt & pepperto taste
2tbspcornstarchplus extra if needed for thickening
Instructions
Place the beef strips in the bottom of your slow cooker. Top with diced onion and sliced bell peppers, nestling them around the beef.
In a separate bowl, whisk together minced garlic, beef broth, crumbled bouillon cubes, soy sauce, Worcestershire sauce, honey, ground ginger, cornstarch, and a pinch of salt and pepper until smooth.
Pour the sauce mixture evenly over the beef and vegetables in the slow cooker.
Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the beef is tender and the flavors are well combined.
If the sauce needs thickening, mix a little extra cornstarch with cold water, stir it into the slow cooker, and cook for another 10–15 minutes until thickened.
