Ingredients

  • 2 pounds beef sirloin cut into strips or chunks
  • 1 onion diced or sliced
  • 3 bell peppers sliced, any color combination
  • 3 cloves garlic minced
  • 3/4 cup beef broth
  • 3 beef bouillon cubes crumbled
  • 1/4 cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tsp Worcestershire sauce
  • 1 tsp ground ginger or fresh grated ginger
  • salt & pepper to taste
  • 2 tbsp cornstarch plus extra if needed for thickening

Instructions

  • Place the beef strips in the bottom of your slow cooker. Top with diced onion and sliced bell peppers, nestling them around the beef.
  • In a separate bowl, whisk together minced garlic, beef broth, crumbled bouillon cubes, soy sauce, Worcestershire sauce, honey, ground ginger, cornstarch, and a pinch of salt and pepper until smooth.
  • Pour the sauce mixture evenly over the beef and vegetables in the slow cooker.
  • Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours, until the beef is tender and the flavors are well combined.
  • If the sauce needs thickening, mix a little extra cornstarch with cold water, stir it into the slow cooker, and cook for another 10–15 minutes until thickened.
  • Serve warm over hot rice or noodles. Enjoy the cozy flavors!

Notes

Leftovers keep beautifully in the fridge for a couple of days — the flavors get even better! Serve with extra veggies or a sprinkle of fresh green onions if you’d like.
