Slow Cooker No Peek Chicken & Rice

This easy and comforting slow cooker recipe features tender chicken breasts nestled on a bed of creamy rice, all slow-cooked together with savory soups and seasonings. With minimal prep and no peeking required, it's a fuss-free family favorite perfect for busy weeknights.

Ingredients
  

  • 1 cup minute rice uncooked
  • 1.5 lbs boneless, skinless chicken breasts
  • 10.5 oz cream of chicken soup
  • 10.5 oz cream of mushroom soup
  • 1 cup chicken broth
  • 1 packet onion soup mix
  • Salt and pepper to taste
  • 1 cup frozen peas or carrots optional

Instructions
 

  • Spray the inside of your slow cooker with non-stick cooking spray.
  • Spread the minute rice evenly over the bottom of the slow cooker.
  • Place the chicken breasts on top of the rice.
  • In a mixing bowl, combine the cream of chicken soup, cream of mushroom soup, and chicken broth. Mix until smooth.
  • Pour the soup mixture over the chicken and rice, making sure everything is covered.
  • Sprinkle the onion soup mix evenly over the top.
  • Cover the slow cooker with the lid and cook on low for 6–7 hours, or until the chicken is cooked through and tender.
  • If using, add the frozen peas or carrots about 30 minutes before serving.
  • Season with salt and pepper to taste before serving.

Notes

You can swap out the chicken breasts for boneless thighs if preferred. For extra flavor, stir in a handful of shredded cheese just before serving, or top with crispy fried onions.
