Ingredients
  

  • 2 lb pork tenderloin trimmed
  • 1/2 cup maple syrup pure
  • 1/4 cup Dijon mustard
  • 2 tbsp soy sauce low sodium preferred
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1/2 tsp black pepper freshly ground
  • 1/4 tsp salt or to taste

Instructions
 

  • In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, olive oil, garlic, black pepper, and salt.
  • Place pork tenderloins in the slow cooker and pour the maple-Dijon mixture over the meat.
  • Cover and cook on low for 4–5 hours, or until pork is tender and cooked through.
  • Remove pork from the slow cooker and let rest for 5 minutes before slicing.
  • Optional: simmer leftover sauce in a small saucepan for 5–10 minutes to thicken before serving over the pork.

Notes

For extra flavor, sear the tenderloins in a skillet before adding to the slow cooker.
