Ingredients
  

  • 4 cod fillets about 6 oz each, fresh or thawed
  • 1/4 cup unsalted butter melted
  • 2 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 4 slices lemon for topping
  • 2 tbsp fresh parsley chopped, for garnish (optional)

Instructions
 

  • Lightly grease the bottom of the slow cooker with a bit of melted butter or cooking spray.
  • In a small bowl, mix melted butter, lemon juice, garlic, salt, and pepper.
  • Place cod fillets in the slow cooker in a single layer. Pour the lemon butter mixture evenly over the fish.
  • Top each fillet with a lemon slice.
  • Cover and cook on LOW for 1.5 to 2 hours, or until the fish flakes easily with a fork.
  • Serve warm, garnished with fresh parsley if desired.

Notes

You can substitute cod with haddock or tilapia. Add a pinch of crushed red pepper for a subtle kick.
