Ingredients
  

  • 3 lb Yukon Gold potatoes peeled and chunked
  • 1 yellow onion thinly sliced
  • 3 cloves garlic minced
  • 1/2 cup butter unsalted, cut into pieces
  • 1 cup chicken broth or vegetable broth
  • 1 tsp salt plus more to taste
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme optional
  • 1/2 cup milk or half-and-half, warmed
  • 1/4 cup sour cream optional
  • 1/4 cup parsley fresh, chopped
  • 2 green onions sliced

Instructions
 

  • Place sliced onion and garlic in the bottom of the slow cooker.
  • Add potatoes on top, then scatter butter pieces over everything.
  • Season with salt, pepper, and thyme. Pour broth over the mixture.
  • Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours until potatoes are very tender.
  • Switch to WARM. Add warmed milk and sour cream, then mash to desired consistency.
  • Adjust seasoning and texture with additional salt or milk if needed.
  • Stir in parsley, garnish with green onions, and serve warm.

Notes

For extra richness, use half-and-half instead of milk. Leave the potatoes slightly chunky for a rustic texture or mash longer for a smoother finish.
