Ingredients
  

  • 2 pounds pork shoulder cut into chunks
  • 1/2 cup hoisin sauce
  • 1/4 cup soy sauce
  • 2 tbsp rice wine vinegar
  • 2 tbsp brown sugar
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp sesame oil
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 cup pineapple chunks
  • 2 bell peppers sliced
  • 1 tbsp cornstarch
  • 2 tbsp water to mix with cornstarch
  • scallions sliced, for garnish
  • sesame seeds for garnish

Instructions
 

  • In a mixing bowl, combine hoisin sauce, soy sauce, rice wine vinegar, brown sugar, garlic, ginger, sesame oil, black pepper, and red pepper flakes.
  • Place the pork shoulder chunks in the slow cooker.
  • Pour the sauce mixture over the pork, ensuring each piece is coated.
  • Add the pineapple chunks and sliced bell peppers to the slow cooker.
  • Cover and cook on low for 6–8 hours, or until the pork is tender.
  • If the sauce is too thin, mix the cornstarch with water and stir it into the sauce to thicken. Let it cook for an additional 15–20 minutes.
  • Serve the pork over jasmine rice or soba noodles, garnished with sliced scallions and sesame seeds.

Notes

For extra flavor, sear the pork in a hot skillet before adding to the slow cooker. You can substitute chicken or tofu for a lighter twist.
