Slow Cooker French Onion Chicken

This cozy slow cooker French onion chicken is everything you want on a cold night—sweet, buttery onions cooked down until meltingly soft, tender shredded chicken, and a blanket of gooey Swiss cheese on top. It’s rich, simple, and tastes like you worked a lot harder than you did.

Ingredients
  

  • 3 to 4 yellow onions thinly sliced
  • 2 tbsp unsalted butter
  • 1.5 lb chicken breasts boneless, skinless
  • 1.5 cups beef broth low-sodium
  • 6 to 8 slices Swiss cheese
  • salt and pepper to taste

Instructions
 

  • Place sliced onions in the bottom of the slow cooker and dot with butter.
  • Pat chicken dry and place on top of the onions.
  • Pour beef broth around the chicken, partially covering it.
  • Cover and cook on LOW for 4–5 hours or HIGH for 2.5–3 hours until chicken is tender.
  • Season with salt and pepper and gently stir onions to distribute.
  • Set heat to HIGH, lay Swiss cheese slices over the top, and cover.
  • Cook an additional 10–15 minutes until cheese is melted and bubbly.
  • Optional: broil briefly for a golden, bubbly finish.

Notes

Serve over mashed potatoes, rice, or crusty bread to soak up the rich onion broth. For deeper flavor, you can caramelize the onions briefly before adding them to the slow cooker.
