Slow Cooker Foil Packet Sausage and Pierogies are an easy, buttery comfort-food dinner made with frozen pierogies, smoked sausage, onions, and melted butter. The sealed foil packets steam everything until tender while keeping cleanup practically effortless.

Ingredients
  

  • 1 package frozen potato-and-cheese pierogies 16- to 20-ounce package; about 12 to 16 pierogies; keep frozen
  • 1 ring smoked sausage or kielbasa 12- to 14-ounce ring, sliced into 1/2-inch rounds
  • 1 large yellow onion Thinly sliced
  • 1/2 cup unsalted butter Melted

Instructions
 

  • Lightly spray the inside of the slow cooker crock with nonstick cooking spray, then tear off two large sheets of heavy-duty aluminum foil, about 18 inches long each.
  • Put the frozen pierogies, sliced smoked sausage, and sliced onion in a large bowl, pour the melted butter over everything, and gently toss until glossy and evenly combined.
  • Divide the mixture evenly between the two foil sheets, piling it in the center of each sheet and making sure each packet gets pierogies, sausage, onions, and butter.
  • Bring the long sides of each foil sheet over the filling and fold them together tightly several times, then roll the short ends in firmly to fully seal each packet while leaving a little space for steam.
  • Place the foil packets seam-side up in the prepared slow cooker, stacking them slightly if needed, and put the lid on snugly.
  • Cook on LOW for 4 to 5 hours or on HIGH for 2 to 2 1/2 hours, until the pierogies are very tender, the sausage is hot throughout, and the onions are soft.
  • Open the slow cooker lid away from your face, carefully lift out the foil packets with tongs or oven mitts, open them while watching for steam, and gently stir the contents to coat the pierogies with the buttery juices.
  • Spoon the sausage and pierogies into shallow bowls, making sure each serving gets some of the juices, and serve hot with optional black pepper or chopped parsley.

Notes

Refrigerate leftovers within 2 hours in a covered container and use within about 3 days. Reheat portions in a covered bowl in the microwave until hot, stirring once if possible, or warm them in a covered skillet over medium-low heat. Add a small splash of water or chicken broth if the butter has solidified and the leftovers seem dry. Do not leave the foil packets at room temperature for extended periods.
