Ingredients
  

  • 3 lb Yukon Gold potatoes scrubbed and quartered
  • 8 oz cream cheese softened
  • 4 tbsp unsalted butter cut into pieces
  • 1 cup chicken broth low-sodium or vegetable broth
  • 2 tbsp ranch seasoning mix
  • 2 tbsp fresh chives chopped
  • 1/2 tsp black pepper
  • salt to taste

Instructions
 

  • Place quartered potatoes into the slow cooker.
  • In a bowl, whisk together cream cheese, butter, broth, ranch seasoning, chives, and pepper.
  • Pour the mixture evenly over the potatoes.
  • Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until fork-tender.
  • Stir gently to coat potatoes in the creamy sauce.
  • Taste and add salt if needed, then garnish with extra chives before serving.

Notes

Avoid lifting the lid during cooking to maintain heat. For extra richness, add shredded cheese at the end or a splash of cream before serving.
