Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 5 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • fresh parsley chopped, for garnish

Instructions
 

  • Season the chicken breasts with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Sear chicken on each side until golden brown, about 3-4 minutes per side.
  • Transfer the chicken to the slow cooker.
  • In a bowl, whisk together chicken broth, heavy cream, garlic, thyme, rosemary, and parsley. Pour over the chicken in the slow cooker.
  • Cover and cook on low for 4-5 hours, or until the chicken is tender and cooked through.
  • Mix cornstarch and water in a small bowl to form a slurry. Stir into the slow cooker and cook on high for an additional 30 minutes to thicken the sauce.
  • Serve chicken with sauce spooned over the top, garnished with fresh parsley.
