Ingredients
  

  • 1 lb ground beef browned and drained
  • 4 cups potatoes diced
  • 1 can red kidney beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 1 can diced tomatoes with green chilies 10 oz, undrained
  • 1 can cream of mushroom soup 10.5 oz
  • 1 small onion diced
  • 1 cup shredded cheddar cheese optional
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Instructions
 

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain the excess fat.
  • In the bottom of a slow cooker, layer the diced potatoes evenly.
  • Add the cooked ground beef on top of the potatoes.
  • Layer the beans, corn, diced tomatoes, onion, and cream of mushroom soup over the beef.
  • Sprinkle in garlic powder, onion powder, salt, and pepper. Stir gently to combine.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender.
  • About 10 minutes before serving, sprinkle cheddar cheese on top and cover until melted.
  • Serve warm and enjoy this hearty casserole!

Notes

For a smoky twist, add 1/2 tsp smoked paprika or use fire-roasted tomatoes instead.
