Slow Cooker Cinnamon Raisin Rice Pudding is a creamy, cozy dessert made with tender short-grain rice, warm cinnamon, vanilla, and plump raisins. The slow cooker does the work while the pudding gently thickens into a comforting bowl.

Ingredients
  

  • 1 tablespoon unsalted butter or neutral oil for greasing the slow cooker; optional
  • 1 cup uncooked short-grain white rice such as Arborio or sushi rice; do not rinse
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 cup raisins
  • 1/4 teaspoon kosher salt optional but recommended
  • ground cinnamon extra for serving, if desired

Instructions
 

  • Lightly grease the inside of the slow cooker crock with the butter or neutral oil, if using.
  • Spread the uncooked short-grain rice evenly over the bottom of the slow cooker, keeping it in as close to a single layer as possible, and do not rinse it.
  • In a large mixing bowl or measuring jug, whisk together the whole milk, sugar, cinnamon, vanilla extract, raisins, and kosher salt, if using, until the sugar is mostly dissolved.
  • Pour the milk mixture evenly over the rice, making sure all the rice is under the liquid, then give everything one gentle stir to loosen any clumps.
  • Cover the slow cooker and cook on LOW for 2 1/2 to 3 1/2 hours, starting to check at 2 1/2 hours, until the rice is very tender and the mixture has thickened into a creamy pudding.
  • Stir the pudding well once the rice is tender, and add a splash of extra milk if it is thicker than desired.
  • Turn the slow cooker to WARM and let the pudding sit for 10 to 15 minutes, or cool it slightly with the lid off, then sprinkle with extra cinnamon if desired and serve warm.

Notes

Store leftover rice pudding in an airtight container in the refrigerator for 3 to 4 days. It thickens considerably when chilled, so stir in a little cold milk before reheating. Reheat individual servings in the microwave with a splash of milk, stirring once or twice, or reheat a larger amount gently in a saucepan over low heat with a little milk.
