Ingredients
  

  • 2 lbs chicken thighs boneless, skinless
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame seeds optional, for garnish
  • 2 green onions sliced, for garnish

Instructions
 

  • Place chicken thighs into the slow cooker in a single layer.
  • In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. Pour over chicken.
  • Cover and cook on low for 4-5 hours or until the chicken is tender and fully cooked.
  • Remove chicken and shred or leave whole. Turn slow cooker to high.
  • Stir in cornstarch slurry to thicken sauce. Let cook for 10-15 minutes until thickened.
  • Return chicken to slow cooker and toss with sauce. Garnish with sesame seeds and green onions before serving.

Notes

Serve over steamed rice or noodles for a complete meal. Swap chicken thighs for chicken breasts if preferred.
