Add half of the frozen tater tots to the bottom of the slow cooker. Top with 1/3 of the bacon bits and 1/3 of the shredded cheese.
Layer diced chicken over cheese. Season with garlic powder, Italian seasoning, salt, and pepper. Add half of the mixed vegetables.
Add another 1/3 of the bacon bits and 1/3 of the cheese. Top with remaining tater tots and frozen vegetables.
Finish with remaining bacon bits and cheese.
Pour half and half evenly over the top.
Cover and cook on LOW for 4–6 hours, or until chicken is fully cooked and casserole is bubbly.

Notes
For extra flavor, use seasoned tater tots or add a sprinkle of green onions before serving. You can also substitute the chicken with turkey or leftover rotisserie meat.
