Slow Cooker Chicken Cacciatore

A hearty Italian classic made easier with a slow cooker. This Chicken Cacciatore features tender chicken thighs simmered with tomatoes, bell peppers, onions, garlic, and herbs. The long, slow cook infuses deep flavors, making it perfect for a cozy dinner served over pasta, rice, or polenta.

Ingredients
  

  • 6 bone-in, skinless chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup onion sliced
  • 1 cup bell peppers sliced (red and green)
  • 3 cloves garlic minced
  • 1 can crushed tomatoes 28 oz
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp crushed red pepper flakes optional
  • 1/4 cup chicken broth

Instructions
 

  • Season chicken thighs with salt and pepper on both sides.
  • In a skillet over medium heat, add olive oil and lightly brown the chicken for 2–3 minutes per side. Transfer to slow cooker.
  • Add sliced onions, bell peppers, and garlic over the chicken in the slow cooker.
  • Pour in crushed tomatoes and chicken broth. Sprinkle oregano, basil, and red pepper flakes over the top.
  • Cover and cook on low for 6–7 hours or until chicken is tender and pulls apart easily.
  • Serve hot over cooked pasta, rice, or polenta. Spoon sauce and vegetables over the top.

Notes

For a richer sauce, stir in a tablespoon of tomato paste before cooking, or add olives for extra flavor.
