Ingredients
  

  • 4 cups yellow onions thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper freshly ground
  • 12 oz pasta such as spaghetti or linguine
  • 1/2 cup parmesan cheese grated, optional
  • 2 tbsp fresh parsley chopped, optional for garnish

Instructions
 

  • Add sliced onions, olive oil, balsamic vinegar, salt, and pepper to the slow cooker. Stir to coat evenly.
  • Cover and cook on low for 6–8 hours, or until onions are deeply caramelized and golden brown.
  • Near the end of cooking, boil pasta according to package instructions. Drain and reserve 1/2 cup pasta water.
  • Toss cooked pasta with the caramelized onions. Add reserved pasta water a little at a time to loosen the sauce.
  • Serve hot, topped with grated parmesan and chopped parsley if desired.

Notes

Try adding sautéed mushrooms or spinach to the mix for extra flavor and texture.
