15 oz, drained and rinsed
Instructions
Heat olive oil in a skillet over medium heat. Sauté onion and garlic for 3–4 minutes until softened.
Transfer onion and garlic to the slow cooker.
Add cabbage, carrots, celery, diced tomatoes, and vegetable broth. Stir to combine.
Season with salt, pepper, thyme, smoked paprika, and add the bay leaf.
Cover and cook on low for 6–7 hours or until vegetables are tender.
Stir in white beans during the last 30 minutes of cooking. Remove bay leaf before serving.
Notes
For added protein, stir in cooked sausage or shredded chicken during the final hour of cooking.
