Ingredients
  

  • 1 lb kielbasa sausage sliced into ½-inch rounds — turkey kielbasa works too
  • 2 large apples peeled, cored, and chopped — Honeycrisp, Gala, or Granny Smith
  • 1/2 cup brown sugar dark or light brown
  • 2 tbsp Dijon mustard yellow mustard can be used instead
  • 1 tbsp apple cider vinegar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup onion finely chopped — sweet onion recommended
  • fresh chopped parsley optional garnish

Instructions
 

  • Place sliced kielbasa in the bottom of your slow cooker.
  • In a medium bowl, stir together chopped apples, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, and nutmeg until apples are coated.
  • Pour the apple mixture over the kielbasa in the slow cooker. Spread evenly if needed.
  • Sprinkle the chopped onion evenly on top.
  • Cover and cook on low for 4–6 hours, stirring gently once or twice if desired.
  • Serve warm with a sprinkle of fresh parsley if you like.

Notes

For a spicier kick, try adding a pinch of crushed red pepper flakes. This dish pairs nicely with crusty bread or fluffy rice to soak up the sweet glaze.
