Slow Cooker Amish Sweet and Sour Pork Chops

Ingredients
  

  • 4 bone-in pork chops about 1-inch thick
  • 2 yellow or white onions thinly sliced
  • 1 cup brown sugar packed
  • 1 cup apple cider vinegar

Instructions
 

  • Spread sliced onions evenly across the bottom of a 4- to 6-quart slow cooker.
  • Arrange pork chops on top of the onions, fitting them snugly if necessary.
  • Whisk together brown sugar and apple cider vinegar until mostly combined, then pour evenly over the pork chops and onions.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, without lifting the lid during cooking.
  • Once pork chops are fork-tender, carefully remove and return them gently to the sauce to stay warm.
  • For a thicker glaze, leave the lid off and let the sauce reduce on WARM for 15–20 minutes.
  • Serve hot with onions and plenty of sauce spooned over the top.

Notes

Mashed potatoes, rice, or egg noodles pair perfectly with the sweet and tangy sauce. Dark brown sugar gives a deeper flavor.
