Ingredients
  

  • 1 cup white rice short or medium grain, uncooked
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 2 large eggs lightly beaten
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon plus more for topping

Instructions
 

  • Lightly grease the inside of the slow cooker with butter or non-stick spray.
  • Spread uncooked rice evenly across the bottom of the slow cooker.
  • In a bowl, whisk together milk, sugar, eggs, vanilla extract, and cinnamon until combined.
  • Pour the mixture over the rice and gently stir to distribute evenly.
  • Cover and cook on LOW for 3 to 4 hours, stirring once or twice during the last hour.
  • Once rice is tender and mixture is creamy, turn off heat and let rest covered for 15–20 minutes to thicken.
  • Stir before serving and add a splash of warm milk if needed to loosen consistency.

Notes

Use brown sugar for a deeper flavor. Sprinkle extra cinnamon on top before serving for a classic finish.
