Ingredients
  

  • 2 lb small yellow potatoes scrubbed and cut into 1 1/2-inch chunks
  • 1 lb fresh green beans trimmed, halved or left whole
  • 12 oz smoked pork hocks, shoulder, or thick bacon
  • 3 cups low-sodium chicken broth or enough to mostly cover vegetables

Instructions
 

  • Place the potato chunks in the bottom of a 5- or 6-quart slow cooker and spread them into an even layer.
  • Add the trimmed green beans over the potatoes.
  • Arrange the smoked pork over the green beans, spacing it out evenly.
  • Pour the chicken broth over everything, using enough to mostly cover the vegetables without fully submerging them.
  • Cover and cook on low for 7–8 hours, or on high for 3 1/2–4 hours.
  • Cook until the potatoes are fork-tender and the green beans are soft but not falling apart.
  • Taste the broth and a potato, then season lightly with salt and black pepper if needed.
  • Stir gently from the bottom to coat the potatoes and green beans with the smoky broth and meat.
  • Serve warm.

Notes

Smoked pork usually seasons the dish well on its own, so add salt only at the end. Stir gently to avoid breaking up the tender potatoes.
