6mediumpotatoespeeled and diced; Russet, gold, or red

4cupschicken brothhomemade or boxed
1cupheavy creamor half-and-half

Instructions
Add potatoes, onion, carrots, and celery to your slow cooker. Pour in the chicken broth and sprinkle in thyme, garlic powder, salt, and pepper. Stir if you like.
Cover and cook on low for 6–8 hours, until the vegetables are tender.
Use a potato masher or immersion blender to mash some of the potatoes to thicken the soup, leaving some chunks for texture.
