Slow Cooker Amish Potato Soup

Ingredients
  

  • 6 medium potatoes peeled and diced; Russet, gold, or red
  • 1 medium onion chopped
  • 2 carrots diced
  • 2 stalks celery diced
  • 4 cups chicken broth homemade or boxed
  • 1 cup heavy cream or half-and-half
  • 2 tbsp butter
  • 1 tsp dried thyme or parsley or rosemary
  • 1 tsp garlic powder or a few minced cloves
  • salt and pepper to taste

Instructions
 

  • Add potatoes, onion, carrots, and celery to your slow cooker. Pour in the chicken broth and sprinkle in thyme, garlic powder, salt, and pepper. Stir if you like.
  • Cover and cook on low for 6–8 hours, until the vegetables are tender.
  • Use a potato masher or immersion blender to mash some of the potatoes to thicken the soup, leaving some chunks for texture.
  • Stir in the heavy cream and butter. Cover again and cook on low for another 30 minutes.
  • Taste and adjust salt and pepper as needed. Serve hot with your favorite toppings if desired.

Notes

For a little extra richness, top with shredded cheese, crumbled bacon, or chopped chives. A side of crusty bread makes it a meal.
