Slow Cooker Amish Poor Man’s Stew

Ingredients
  

  • 2 lbs russet potatoes peeled and cubed
  • 1 yellow onion chopped
  • 1 tsp salt plus more to taste
  • 1/2 tsp black pepper
  • 1 lb ground beef 80–85% lean
  • 10.5 oz condensed tomato soup 1 can
  • 1 cup beef broth or water with bouillon

Instructions
 

  • Spread cubed potatoes evenly across the bottom of the slow cooker.
  • Add chopped onion over the potatoes, then sprinkle with salt and black pepper.
  • Crumble raw ground beef evenly over the top, breaking it into small pieces.
  • In a bowl, mix condensed tomato soup with beef broth until mostly smooth. Pour over ingredients without stirring.
  • Cover and cook on LOW for 7–8 hours or HIGH for about 4 hours, until potatoes are tender.
  • Stir from the bottom up to combine. Taste and adjust salt as needed. Let sit uncovered for 5–10 minutes to thicken slightly.

Notes

Add carrots or green beans for extra vegetables. A sprinkle of cheese on top before serving adds richness.
