Ingredients
  

  • 12 ounces wide egg noodles uncooked
  • 3 cups shredded pepper jack cheese divided; 2 cups for cooking and 1 cup for topping
  • 2 cans (10.5 ounces each) condensed cream of chicken soup
  • 2 cups whole milk
  • 1 cup mixed green and red bell peppers finely diced
  • butter or nonstick cooking spray for greasing the slow cooker

Instructions
 

  • Lightly grease the inside of a 5- to 6-quart slow cooker with butter or nonstick spray, coating the bottom and lower sides.
  • In a large bowl, whisk together both cans of condensed cream of chicken soup and the whole milk until smooth.
  • Stir the finely diced green and red bell peppers into the soup-and-milk mixture until evenly distributed.
  • Add the uncooked wide egg noodles to the prepared slow cooker and spread them evenly across the bottom.
  • Pour the creamy pepper mixture over the noodles and gently press the noodles down so they are mostly submerged in the liquid.
  • Sprinkle 2 cups of the shredded pepper jack cheese evenly over the noodles and sauce, reserving the remaining 1 cup.
  • Cover and cook on LOW for 2 1/2 to 3 1/2 hours, until the noodles are tender but not mushy, without lifting the lid during cooking.
  • When the noodles are tender and the sauce is thick and creamy, sprinkle the remaining 1 cup pepper jack cheese over the top, cover, and cook on LOW for 15 to 20 minutes until melted and bubbly.
  • Gently stir from the edges toward the center, pulling some of the extra-cheesy top down into the noodles while leaving plenty of melted cheese on top.
  • Turn the slow cooker to WARM and let the noodle bake sit for 5 to 10 minutes, then scoop it out hot.

Notes

Refrigerate leftovers promptly in shallow containers and do not leave the noodle bake at room temperature for more than 2 hours. Store refrigerated for a few days. Reheat individual servings until steaming hot, adding a small splash of milk if the noodles seem thick or dry. Cover loosely when microwaving to help prevent splattering.
