Ingredients

  • 2 lb boneless skinless chicken breasts diced into roughly 1-inch pieces
  • 1 cup unsalted butter 2 sticks, melted
  • 2 tbsp minced garlic jarred or fresh
  • 4 cups low-sodium chicken broth plus more if needed
  • 12 oz wide egg noodles uncooked
  • salt and black pepper to taste

Instructions

  • Place the diced chicken in an even layer in the bottom of the slow cooker.
  • Stir the minced garlic into the warm melted butter.
  • Pour the garlic butter evenly over the chicken.
  • Add the chicken broth and stir lightly to tuck the chicken into the liquid.
  • Cover and cook on low for 4–5 hours, or on high for about 2 1/2 hours, until the chicken is very tender.
  • Taste the broth and season with salt and black pepper as needed.
  • Stir in the uncooked wide egg noodles and press them down so they are mostly submerged.
  • Add a splash of water or extra broth if the liquid looks too low.
  • Cover and cook on high for about 20–25 minutes, stirring once halfway through, until the noodles are tender but not mushy.
  • Stir well until the noodles, chicken, and garlic butter sauce look creamy, thick, and glossy.
  • Serve hot directly from the slow cooker.

Notes

Check the noodles early so they do not overcook. Add extra broth only as needed to keep them mostly submerged.
