Slow Cooker Amish Country Tomato Beef Casserole

Ingredients
  

  • 2 lbs lean ground beef
  • 21 oz condensed tomato soup 2 cans
  • 1 cup water
  • 2 cups wide egg noodles uncooked
  • 1 cup sour cream full fat
  • 1 cup mild cheddar cheese shredded, divided

Instructions
 

  • Lightly grease the inside of the slow cooker with butter or cooking spray.
  • Spread raw ground beef evenly across the bottom of the slow cooker.
  • Whisk condensed tomato soup with water until smooth, then pour evenly over the beef.
  • Scatter uncooked egg noodles evenly over the soup mixture and gently press them down into the liquid.
  • In a bowl, combine sour cream with half of the shredded cheddar cheese. Spoon mixture evenly over the noodles.
  • Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until noodles are tender and casserole is bubbling.
  • Sprinkle remaining cheese over the top, cover, and let melt for about 10 minutes.
  • Gently stir from the edges inward before serving. Season with salt and black pepper to taste.

Notes

Add diced onions or mushrooms for extra flavor. Serve with buttered bread or a simple green salad.
