Slow Cooker 5-Ingredient Irish Coddle

A hearty slow cooker Irish coddle made with browned pork sausages, smoky bacon, tender potatoes, onions, and savory broth. This rustic comfort meal is simple, filling, and perfect served hot with crusty bread or soda bread.

Ingredients
  

  • 1 1/2 lb thick pork sausages Irish bangers if available
  • 6 oz thick-cut bacon chopped
  • 2 lb potatoes peeled and cut into large chunks
  • 2 large yellow onions halved and thinly sliced
  • 2 cups low-sodium chicken broth or vegetable broth
  • salt and black pepper to taste
  • fresh parsley optional, for serving

Instructions
 

  • Brown the sausages in a skillet over medium heat for 8–10 minutes, turning occasionally, until browned on the outside.
  • Remove the sausages, let them cool slightly, then cut them into large chunks.
  • In the same skillet, cook the chopped bacon over medium heat for 6–8 minutes, until rendered and crisp.
  • Remove the bacon with a slotted spoon and set aside.
  • Place the potato chunks in the bottom of the slow cooker.
  • Layer the sliced onions over the potatoes and season lightly with salt and black pepper.
  • Arrange the sausage chunks over the onions.
  • Scatter the cooked bacon over the top.
  • Pour in the chicken broth.
  • Cover and cook on low for 6–8 hours, or on high for 3–4 hours, until the potatoes are very tender and the onions are soft.
  • Taste the broth and adjust the salt and pepper if needed.
  • Stir gently before serving so the potatoes do not break apart too much.
  • Ladle into bowls and garnish with parsley if desired.

Notes

Browning the sausages adds deeper flavor and better texture. Serve with crusty bread or soda bread to soak up the broth.
