Ingredients
  

  • 1.5 lb chicken breasts boneless, skinless
  • 1 can diced tomatoes 14.5 oz, with juice
  • 1 onion finely chopped
  • 1 tsp salt
  • 1 tsp sweet paprika

Instructions
 

  • Place chicken breasts in a single layer at the bottom of the slow cooker.
  • Scatter chopped onion over the chicken.
  • Sprinkle salt and paprika evenly over the top.
  • Pour diced tomatoes with their juice over everything.
  • Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours.
  • Shred the chicken directly in the slow cooker and stir to coat in the sauce.
  • Taste and adjust seasoning if needed, then serve warm.

Notes

Serve over buttered egg noodles, mashed potatoes, rice, or crusty bread to soak up the sauce. Chicken thighs can be used for a richer flavor.
