Ingredients
  

  • 2 lb beef stew meat cut into 1-inch chunks
  • 4 medium potatoes peeled and diced
  • 3 carrots sliced
  • 1 onion chopped
  • 2 cups beef broth low sodium preferred

Instructions
 

  • Add beef, potatoes, carrots, and onion to the slow cooker.
  • Pour beef broth over the ingredients and gently stir to combine.
  • Cover and cook on low for 8 hours, or until beef is tender and vegetables are soft.
  • Taste and adjust seasoning with salt and pepper if desired before serving.

Notes

For a thicker stew, stir in 1 tablespoon of cornstarch mixed with 2 tablespoons of water during the last 30 minutes of cooking.
