Ingredients

  • 1.5 lb ground beef 80–85% lean
  • 4 cups chicken broth low-sodium
  • 1 can condensed cream of potato soup 10.5 oz, undiluted
  • 1 can condensed cheddar cheese soup 10.5 oz, undiluted
  • 1 cup shredded cheddar cheese packed

Instructions

  • Place raw ground beef in the slow cooker and break it into chunks.
  • Pour chicken broth over the beef.
  • Add condensed cream of potato soup and cheddar cheese soup.
  • Stir gently to loosely combine ingredients.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • Stir halfway through cooking to break up the beef.
  • Once beef is fully cooked, stir in shredded cheddar cheese gradually until melted and smooth.
  • Taste and adjust seasoning if needed.
  • Serve warm with optional toppings like pickles, green onions, or extra cheese.

Notes

Add extra broth for a thinner consistency or more cheese for a richer texture. Stir cheese in gradually to prevent clumping.
