frozen mixed vegetables

Instructions
Lightly grease the inside of the slow cooker with butter or nonstick cooking spray.
Arrange the raw beef stew meat across the bottom of the slow cooker in a mostly even layer.
In a bowl, whisk together the cream of mushroom soup and beef broth until mostly combined.
Pour the soup mixture over the beef, covering it as evenly as possible.
Season with salt and black pepper.
Stir very gently just to distribute the seasoning.
Add the frozen mixed vegetables on top without stirring them in.
Cover and cook on low for 7–8 hours, or on high for 4–5 hours, until the beef is very tender.
Stir everything together from the bottom so the vegetables mix into the gravy.
Taste and adjust with more salt or black pepper if needed.
Serve warm over split biscuits or thick bread.
Notes
Cooking on low gives the beef the most tender texture. Serve over biscuits for a classic pot pie-style meal.
