Ingredients
  

  • 2 lb beef stew meat cut into roughly 1-inch chunks
  • 16 oz frozen mixed vegetables peas, carrots, corn, and green beans
  • 1 can cream of mushroom soup 10.5 oz
  • 1 can beef broth 14.5 oz
  • salt and black pepper to taste

Instructions
 

  • Lightly grease the inside of the slow cooker with butter or nonstick cooking spray.
  • Arrange the raw beef stew meat across the bottom of the slow cooker in a mostly even layer.
  • In a bowl, whisk together the cream of mushroom soup and beef broth until mostly combined.
  • Pour the soup mixture over the beef, covering it as evenly as possible.
  • Season with salt and black pepper.
  • Stir very gently just to distribute the seasoning.
  • Add the frozen mixed vegetables on top without stirring them in.
  • Cover and cook on low for 7–8 hours, or on high for 4–5 hours, until the beef is very tender.
  • Stir everything together from the bottom so the vegetables mix into the gravy.
  • Taste and adjust with more salt or black pepper if needed.
  • Serve warm over split biscuits or thick bread.

Notes

Cooking on low gives the beef the most tender texture. Serve over biscuits for a classic pot pie-style meal.
