Slow Cooker 4-Ingredient Porcupine Meatballs

Classic porcupine meatballs made with ground beef, uncooked rice, condensed tomato soup, and water, then slow cooked until tender in a simple tomato sauce. This old-fashioned comfort meal is budget-friendly, family-style, and perfect over mashed potatoes or with a green vegetable.

Ingredients
  

  • 2 lb ground beef 80–85% lean
  • 1 cup uncooked long-grain white rice
  • 2 cans condensed tomato soup 10.5 oz each
  • 1 1/2 cups water

Instructions
 

  • In a large bowl, combine the ground beef and uncooked long-grain white rice.
  • Mix gently by hand until the rice is evenly distributed through the beef, being careful not to overmix.
  • Roll the mixture into meatballs about 1 1/2 inches wide, making about 24 meatballs.
  • Lightly spray the inside of the slow cooker with cooking spray.
  • Arrange the meatballs in the slow cooker, stacking slightly if needed.
  • In a separate bowl, whisk together the condensed tomato soup and water until smooth.
  • Pour the tomato soup mixture over the meatballs, coating them as evenly as possible.
  • Cover and cook on low for 6–7 hours, or on high for 3–4 hours.
  • Cook until the meatballs have no pink in the center and the rice is tender and translucent.
  • Spoon sauce over the meatballs before serving.

Notes

Handle the beef mixture gently so the meatballs stay tender. Serve with mashed potatoes, buttered noodles, or steamed green beans.
