Ingredients
  

  • 4 cups russet potatoes peeled and diced into 1/2-inch cubes
  • 3 cups frozen corn kernels or well-drained canned corn
  • 4 cups chicken broth or vegetable broth
  • 2 cups heavy cream or half-and-half
  • as desired freshly ground black pepper for serving
  • as desired shredded cheese optional topping
  • as desired crumbled bacon optional topping
  • as desired crackers or extra corn optional topping

Instructions
 

  • Add the peeled, diced potatoes to the bottom of a 4- to 6-quart slow cooker and spread them into an even layer.
  • Pour the corn over the potatoes, then add the chicken broth or vegetable broth and gently stir so most of the potatoes are sitting in the liquid.
  • Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the potatoes are very tender when poked with a fork.
  • Use a potato masher or the back of a large spoon to lightly mash some of the potatoes and corn in the slow cooker, leaving plenty of tender chunks.
  • Stir in the heavy cream or half-and-half, scraping around the edges and bottom so everything combines.
  • Cover again and cook on LOW for 20 to 30 minutes, just until the chowder is hot throughout and slightly thickened, without letting it boil.
  • Taste the chowder and adjust the seasoning only if needed, keeping in mind that broth may already contain salt.
  • Ladle the chowder into warm bowls and serve with freshly cracked black pepper and any desired toppings.

Notes

Store leftover chowder in a covered container in the refrigerator for up to 3 days. It will thicken as it sits; add a splash of broth, milk, or cream when reheating. Reheat gently on the stovetop over low heat or in the microwave in short bursts, and avoid boiling. Freezing is not recommended because the potatoes and cream may become grainy after thawing.
