Ingredients
  

  • 4 thick-cut bone-in pork chops about 1 1/4 inches thick, 2 1/2 to 3 lb total
  • 1 cup brown sugar packed, light or dark
  • 1 cup Italian dressing regular full-fat
  • 1/4 cup low-sodium soy sauce

Instructions
 

  • Optional: Sear the pork chops in a hot skillet for 1–2 minutes per side, until browned on the outside.
  • Place the pork chops in a 6-quart slow cooker in a single layer if possible.
  • In a bowl, whisk together the brown sugar, Italian dressing, and low-sodium soy sauce until smooth and glossy.
  • Pour the sauce over the pork chops, coating them well.
  • Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the pork chops are very tender.
  • Carefully remove the pork chops with a wide spatula and tongs, then transfer them to a serving platter.
  • Skim excess fat from the cooking liquid if needed.
  • Turn the slow cooker to high with the lid off and let the sauce bubble for 10–15 minutes, until slightly thickened and syrupy.
  • Spoon the sauce generously over the pork chops before serving.

Notes

Thick-cut bone-in chops stay juicier and hold together best. Serve extra sauce at the table for potatoes, rice, or noodles.
