Slow Cooker 3-Ingredient Crack Chicken

Ingredients
  

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 8 oz cream cheese cut into large cubes
  • 2 tbsp dry ranch seasoning mix store-bought or homemade

Instructions
 

  • Place the chicken in an even layer on the bottom of the slow cooker. If you’re using both breasts and thighs, mix them together so they cook evenly.
  • Sprinkle the dry ranch seasoning mix evenly over the chicken, making sure most of the surface is lightly coated.
  • Scatter the cream cheese cubes over the top of the seasoned chicken. Do not stir.
  • Cover the slow cooker and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the chicken is tender.
  • Use two forks to shred the chicken directly in the slow cooker. Stir well to incorporate the melted cream cheese and ranch seasoning.
  • Taste and adjust the seasoning if needed. If the mixture is too thick, add a splash of warm chicken broth or milk and stir until smooth.
  • Switch to WARM and serve straight from the pot or transfer to a serving dish.

Notes

For extra richness, top with shredded cheddar, chopped bacon, or sliced green onions. Perfect served on buns, baked potatoes, or over pasta.
