Ingredients

  • 1 box yellow cake mix 15.25-ounce box
  • 1 1/2 cups prepared chai latte From a carton or chai concentrate mixed with milk; cold or room temperature is fine
  • 2 tablespoons ground cinnamon
  • nonstick cooking spray, butter, or oil For greasing the slow cooker

Instructions

  • Spray the inside of a 4- to 6-quart slow cooker with nonstick cooking spray, or grease it lightly with butter or oil.
  • Put the dry yellow cake mix in a medium bowl and pour in the 1 1/2 cups prepared chai latte.
  • Whisk just until the batter comes together, keeping the mixing gentle so the cake stays tender.
  • Pour the batter into the greased slow cooker and use a spatula to spread it into an even layer.
  • Put the 2 tablespoons cinnamon in a small bowl and sprinkle about half of it evenly over the batter.
  • Use a butter knife or skewer to gently swirl the cinnamon into the very top layer of batter with loose figure eights, then sprinkle the remaining cinnamon over the surface and swirl lightly again.
  • Cover the slow cooker and cook on HIGH for 1 1/2 to 2 1/2 hours, or on LOW for 3 to 4 hours, checking near the early end of the range.
  • The cake is ready when the center looks set, the top is golden with darker cinnamon swirls, and a toothpick inserted in the middle comes out mostly clean with a few moist crumbs.
  • Turn the slow cooker to WARM and let the cake sit, covered, for 10 to 15 minutes.
  • Scoop the cake into bowls and serve it warm with optional whipped cream, vanilla ice cream, caramel sauce, or a dusting of extra cinnamon.

Notes

Do not leave the cake on WARM longer than 2 to 3 hours. Once cooled, transfer leftovers to a covered container and refrigerate for up to 3 days. Reheat individual servings in the microwave until just warm, starting with 20 to 30 seconds.
