Ingredients
  

  • 3 cups white chocolate chips Use a brand you enjoy eating; they should melt nicely.
  • 1 can (14 ounces) sweetened condensed milk Do not substitute evaporated milk.
  • 2 tablespoons fresh lime zest Zest only the green part; do not use lime juice.

Instructions
 

  • Line an 8-inch square pan or small baking dish with foil or parchment paper, leaving enough overhang to lift out the fudge later, and lightly grease the lining if needed.
  • Add the white chocolate chips and sweetened condensed milk to the slow cooker, cover, and cook on low for 30 to 45 minutes, stirring every 10 to 15 minutes, until smooth and fully melted.
  • Stir in the fresh lime zest until it is evenly distributed and the mixture is thick, creamy, and lightly flecked with green.
  • Spread the fudge mixture into the prepared pan and smooth the top with a spatula; sprinkle a pinch of additional lime zest over the top if desired.
  • Refrigerate the pan for 2 to 3 hours, until firm, then lift out the fudge using the parchment or foil overhang, cut it into 25 small squares, and serve chilled or at cool room temperature.

Notes

Keep the fudge in an airtight container in the refrigerator for up to 1 week. Place parchment or wax paper between stacked squares to prevent sticking. No reheating is needed; let a piece sit at room temperature for a few minutes if you prefer it softer.
