Instructions
Lightly spray the inside of the slow cooker with nonstick cooking spray.
Place the pork chops flat in the bottom of the slow cooker, keeping them mostly in a single layer.
In a bowl, stir together the dry herb-seasoned stuffing mix and undiluted cream of chicken soup.
Spoon the stuffing mixture evenly over the pork chops, spreading it to the edges.
Cover and cook on low for 5–6 hours, or on high for 2 1/2–3 hours, until the pork reaches 145°F and is tender.
Avoid lifting the lid during cooking so the heat stays steady and the stuffing sets properly.
Remove the lid and let the pork chops rest for 5 minutes before serving.
Notes
Do not add extra liquid; the pork releases enough moisture as it cooks. Use thicker chops for the best texture.
