Ingredients
  

  • 2 lb boneless skinless chicken breasts or thighs
  • 1 cup apricot preserves
  • 1 packet dry onion soup mix

Instructions
 

  • Lightly grease the inside of a 4-quart or 6-quart slow cooker.
  • Place the chicken in an even layer in the bottom of the slow cooker.
  • Spoon the apricot preserves over the chicken.
  • Sprinkle the dry onion soup mix evenly over the top.
  • Cover and cook on low for 5–6 hours, or on high for 3–4 hours, until the chicken is fully cooked and tender.
  • Gently stir the sauce before serving, spooning it over the chicken.
  • Serve warm over rice, egg noodles, or mashed potatoes.

Notes

For a tangier sauce, stir in 1 tablespoon apple cider vinegar before cooking. Chicken thighs stay especially tender in this recipe.
