Ingredients
  

  • 1 lb asparagus trimmed
  • 3 cups carrots sliced into 1/2-inch thick sticks
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large bowl, combine asparagus and carrots. Drizzle with olive oil and toss to coat evenly.
  • Sprinkle garlic powder, salt, and black pepper over the vegetables. Toss again to distribute the seasonings.
  • Spread the vegetables in a single layer on the prepared baking sheet.
  • Roast for 20–25 minutes, stirring halfway through, until carrots are tender and edges are slightly golden.
  • Serve warm as a side dish.

Notes

For extra flavor, add a squeeze of lemon juice or a sprinkle of parmesan just before serving.
