Ingredients

  • 1 cup peanut butter creamy
  • 1/4 cup unsalted butter softened
  • 1 cup powdered sugar
  • 2 cups Rice Krispies cereal
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil optional, for smoother chocolate coating

Instructions

  • In a large mixing bowl, combine peanut butter, softened butter, and powdered sugar. Mix until smooth.
  • Gently fold in the Rice Krispies cereal until evenly coated with the peanut butter mixture.
  • Shape the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Freeze for 15 minutes.
  • While the balls chill, melt chocolate chips with coconut oil (if using) in a microwave-safe bowl, stirring every 30 seconds until smooth.
  • Dip each ball into the melted chocolate using a fork or skewer, allowing excess to drip off, and place back on the lined sheet.
  • Refrigerate until chocolate is set, about 15 minutes. Store in the fridge or freezer.

Notes

You can swap semi-sweet chocolate for dark or milk chocolate depending on your preference.
