Ingredients
  

  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 can (15 oz) pumpkin puree
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 8 oz cream cheese softened
  • 1/2 cup butter softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F and grease a 10x15-inch rimmed baking pan.
  • Whisk the eggs, sugar, oil and pumpkin, then stir in the flour, baking powder, baking soda, salt and spices.
  • Spread in the pan and bake 25 to 30 minutes, until a toothpick comes out clean. Cool completely.
  • Beat the cream cheese and butter, then beat in the powdered sugar and vanilla until fluffy.
  • Frost the cooled bars, chill 30 minutes and cut into squares.

Notes

Keep covered in the fridge up to 5 days, or freeze up to 2 months.
