Potato Salad Extraordinaire

Potato Salad Extraordinaire is a creamy, tangy, crowd-friendly side dish with Russet potatoes, hard-boiled eggs, crunchy vegetables, and a sweet-tangy dressing made with mayonnaise, mustard, relish, and dark brown sugar. It gets even better after chilling as the potatoes soak up the dressing.

Ingredients
  

  • 5 pounds Russet potatoes unpeeled for boiling
  • 8 hard-boiled eggs chopped
  • 1 1/2 cups red onion chopped
  • 1 cup celery chopped
  • 1/2 cup green pepper chopped
  • 1/4 cup dark brown sugar firmly packed
  • 1/2 cup sweet pickle relish
  • 3 cups mayonnaise
  • 1/2 cup mustard
  • 1 teaspoon salt plus salted water for boiling the potatoes
  • 1/2 teaspoon pepper

Instructions
 

  • Put the unpeeled Russet potatoes in a very large pot, cover them with water, add salt to the water until it tastes salty but not overly salty, then bring to a boil and cook until the potatoes are just tender when pierced with a fork, about 15 minutes once boiling.
  • Drain the potatoes and let them cool until you can handle them, then rub or peel off the skins, leaving any tiny stubborn bits if needed.
  • Cut the peeled potatoes into chunks and place them in your biggest mixing bowl.
  • Add the chopped hard-boiled eggs, red onion, celery, and green pepper to the potatoes, then toss everything together gently without mashing the potatoes.
  • In a separate bowl, stir together the firmly packed dark brown sugar, sweet pickle relish, mayonnaise, and mustard until the brown sugar is well worked into the dressing.
  • Pour the dressing over the potato mixture and fold it through until everything is well coated, remembering that the potatoes will soak up the dressing as the salad chills.
  • Add the salt and pepper, taste and adjust if needed, then cover the bowl and refrigerate for at least a little while before serving.

Notes

Keep the potato salad covered in the refrigerator and serve it cold; do not reheat. If it has been sitting out for a meal, return it to the refrigerator as soon as possible. Leftovers keep well refrigerated, taste especially good the next day, and should be gently stirred before serving again.
