Ingredients
  

  • 6 pork chops bone-in or boneless
  • 2 tbsp olive oil for searing
  • 6 cups potatoes peeled and thinly sliced
  • 2 cups cheddar cheese shredded
  • 1 cup milk whole or 2%
  • 1 cup heavy cream
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp salt divided
  • 1/2 tsp black pepper divided
  • 1/2 tsp paprika

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • In a large skillet, heat olive oil over medium-high heat. Season pork chops with half the salt, pepper, and paprika. Sear pork chops for 2–3 minutes per side until browned but not fully cooked. Set aside.
  • In a saucepan, heat a bit of oil and sauté onion and garlic until softened. Stir in milk and cream, then bring to a simmer. Season with remaining salt and pepper.
  • Layer half the sliced potatoes in the baking dish. Pour over half of the cream mixture and sprinkle with 1 cup of cheese.
  • Add remaining potatoes, pour over the rest of the cream mixture, and top with the remaining cheese.
  • Place seared pork chops on top. Cover dish with foil and bake for 35 minutes. Uncover and bake an additional 15 minutes until golden and bubbly.
  • Let rest for 5 minutes before serving. Enjoy warm.

Notes

Try using a blend of cheeses like mozzarella or Monterey Jack for added creaminess.
