Polish Hamburgers

Ingredients
  

  • 1 lb ground pork
  • 1 lb ground beef
  • 1 sleeve saltine crackers, crushed
  • 2/3 cup milk
  • 2 eggs, beaten
  • 1 small yellow onion, minced
  • 1 green bell pepper, minced
  • 1 tablespoon dried dill
  • 1/2 tablespoon garlic powder
  • 1 tablespoon dried parsley
  • 1/2 teaspoon nutmeg
  • 2 tablespoons butter
  • 1/4 cup butter (for sauce)
  • 2 cups mushrooms, sliced
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups beef stock
  • 2 tablespoons sour cream
  • Kosher salt and freshly ground black pepper, to taste

Instructions
 

  • In a large bowl, combine pork, beef, saltines, milk, eggs, onion, bell pepper, dill, garlic powder, parsley, nutmeg, salt, and pepper. Mix thoroughly.
  • Form into six 2-inch-thick patties. Place on lined baking sheet and let rest for 30 minutes.
  • Heat 2 tablespoons butter in skillet over medium-high heat. Sear patties in batches until browned on both sides. Set aside.
  • Add remaining 1/4 cup butter to skillet. Add mushrooms, Worcestershire sauce, and garlic. Cook until mushrooms are soft.
  • Stir in flour and cook 1 minute. Gradually stir in beef stock. Bring to simmer.
  • Return patties to pan. Cover, reduce heat, and simmer for 30 minutes.
  • Uncover, stir in sour cream, and adjust seasoning to taste. Serve hot.

Notes

This Polish-style dish is hearty, flavorful, and perfect for a cool evening. Serve with mashed potatoes or crusty bread.
