Ingredients

  • 1 large French bread loaf or Italian bread sliced lengthwise
  • 4 tbsp unsalted butter softened
  • 3 cloves garlic minced
  • 1 tbsp fresh parsley finely chopped
  • 1/4 tsp salt for garlic butter
  • 1 lb ribeye steak thinly sliced
  • 1 tbsp olive oil
  • 1 green bell pepper thinly sliced
  • 1 small onion thinly sliced
  • 1/2 tsp salt for steak
  • 1/2 tsp black pepper
  • 1/2 tsp Worcestershire sauce optional
  • 6 to 8 slices provolone cheese
  • 1/2 cup shredded cheddar cheese optional

Instructions

  • Preheat the oven to 375°F and line a baking sheet with parchment paper.
  • In a small bowl, mix the softened butter, minced garlic, parsley, and 1/4 teaspoon salt.
  • Spread the garlic butter generously over both cut sides of the bread.
  • Place the bread cut-side up on the prepared baking sheet and bake for 8–10 minutes, until lightly crisp but not fully browned.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the sliced onion and green bell pepper, then cook for 4–5 minutes, until softened and lightly golden at the edges. Remove from the skillet and set aside.
  • Add the thinly sliced steak to the same skillet in a single layer, working in batches if needed.
  • Season with 1/2 teaspoon salt, black pepper, and Worcestershire sauce. Cook for 2–3 minutes, stirring occasionally, until just cooked through.
  • Return the peppers and onions to the skillet and stir with the steak until combined.
  • Spoon the steak and vegetable mixture evenly over both garlic bread halves.
  • Layer the provolone cheese over the top and sprinkle with cheddar cheese if using.
  • Bake for 8–10 minutes, until the cheese is melted and bubbling.
  • Broil for 1–2 minutes if a more golden top is desired, watching carefully.
  • Let the garlic bread rest for 3–5 minutes before slicing and serving warm.

Notes

Slice the steak very thin for the best texture. Broil only briefly at the end, as the cheese and bread can brown quickly.
