Ingredients
  

  • 1 pound breakfast sausage
  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup maple syrup
  • 1/4 cup butter melted
  • 1 tsp cinnamon optional

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a skillet, cook breakfast sausage over medium heat until browned and cooked through. Drain excess fat.
  • In a large bowl, combine pancake mix, milk, eggs, vanilla extract, and cinnamon if using. Stir until just combined.
  • Grease a 9x13-inch baking dish with butter or cooking spray.
  • Pour half the pancake batter into prepared baking dish.
  • Evenly distribute cooked sausage over batter.
  • Pour remaining pancake batter over sausage.
  • Drizzle maple syrup over the top of the casserole.
  • Bake 30-35 minutes, until top is golden and a toothpick inserted in the center comes out clean.
  • Let cool for a few minutes before slicing and serving.

Notes

For a sweet-savory twist, sprinkle shredded cheddar over the top before baking.
