Instructions
Preheat oven to 375°F (190°C).
In a large oven-safe skillet or Dutch oven, heat olive oil over medium heat. Brown bratwursts on all sides, about 5–7 minutes total. Remove and set aside.
In the same skillet, add sliced onions and cook for 5–7 minutes until they begin to soften and caramelize.
Add sliced apples, Dijon mustard, caraway seeds (if using), and season with salt and pepper. Stir to combine and cook for 2–3 more minutes.
Return bratwursts to the skillet, nestling them into the apple-onion mixture. Pour in the beer and bring to a simmer.
Transfer the skillet to the oven and bake uncovered for 25–30 minutes, until the brats are fully cooked and the liquid is slightly reduced.
If desired, dot with butter just before serving for added richness. Serve warm with crusty bread or mashed potatoes.
